Characteristics
The shaping is still done with wooden molds as traditionally done by old shepherds. It is an aged pecorino of about 8 months that can be aged up to 1 year.
It is a product whose peculiarity is that it is aged in a humid environment, which allows it to refine its enveloping taste. The paste is straw-yellow, tending to be spicy, but never salty, obtained from the use of a strong rennet that enhances its flavor. Externally it has a smooth rind, with an irregular shape of a deep brown with shades tending to black as it ages.

When paired with fig or raspberry jams, it can amaze even the most refined palates.
Also excellent for grating over the well-known Amatriciana.
Pair with robust and aged ruby red wines that enhance the strong and pungent flavor of the long-aged cheese.
It is presented as a small wheel/wedge (vacuum-packed if requested by the client to preserve its organoleptic qualities) weighing approximately 250g
