Italian pasteurized sheep's milk, processed within 24 hours of milking.
Ingredients
Pasteurized sheep's MILK, rennet, salt, lactic cultures, summer truffle - Tuber Aestivum Vitt.
Characteristics
Basket-shaped with a clear yellow rind, the interior has a white paste and numerous black truffle flakes, which, combined with the milk, release a deep flavour reminiscent of the woods where it originates.
The internal paste, very creamy and crumbly, has a slight "eyes" typical of all caciotte and an unmistakable aroma given by the truffle flakes.
Aging 30-60 days
In the kitchen
Excellent melted for croutons or enjoyed with honey, not to mention using it grated on pasta.
Pair with red wine.
It comes as a vacuum-packed caciottina to preserve its organoleptic properties, weighing approximately 400g.
Also available in an 800g (approx.) size.
