Characteristics
A soft cheese with an unmistakable aroma and flavor, a true tasting journey to immerse oneself in with a harmony that makes the flavors harmonious thanks to the tacit alliance between sweet and savory. A play of contrasting textures and flavors between the strong taste of the cheese and the delicacy and sweetness of the forest honeydew. A compact Pecorino cheese made from sheep's milk, it has an external rind characterized by a coating of flowers, which give this product an enveloping aroma, within which drops of honey are found for a perfect harmony of flavors aimed at enhancing the sensations on the palate without one being more intrusive than the other.
The production of this aged cheese takes place with the help of wooden vats containing liquid forest honeydew, in which the product is immersed for about 7 months. This long and particular aging favors a flaking of the paste which allows the penetration by osmosis of the honey found inside and visible when the product is cut. Subsequently to this immersion phase in the forest honeydew, the cheese is covered with sifted chamomile flowers, Roman chamomile, elderflowers, blue cornflower, safflower flowers and sunflower petals which give the cheese a natural fragrance.
The perfect combination of the creaminess of the cheese combined with the honeydew and the fragrance of the flowers give this unique product a particular hint of undergrowth.
