Characteristics
"Lo Sbronzo" is an aged Pecorino cheese produced with late lactation milk, which is wrapped in Cesanese grape pomace during the harvest period. These unique native Lazio grape varieties give this cheese character and a strong connection to the territory. It is a medium-aged cheese with a compact paste that melts in the mouth, with a sweet taste and a slight hint of wine that can be perceived from the rind to the core.
Pecorino with a piquant and persistent flavor, with an intense wine aroma. Its surface is completely covered with purplish pomace, and inside it has streaks of the same color that stand out against the whiteness of the paste. The pomace in which this sublime-tasting Pecorino is wrapped is carefully selected by an expert oenologist together with our cheesemaker. This particular aging process gives this product an unmistakable aroma and flavor, determining its decisive character.


Aging 6 months


In the kitchen
It is recommended to store the vacuum-packed cheese in the refrigerator. To enhance its taste and aroma, it is suggested to enjoy it with a good Lazio Cesanese red wine, accompanied by aged cured meats.

 

It comes in a small form/wedge (vacuum-sealed if requested by the customer to preserve its organoleptic qualities) weighing approximately 250g. Possibility of purchasing a whole wheel weighing approximately 1kg.
